LAVONIA – Last week, individuals from the community brought blueberries, green beans and chicken to put in cans and jars at the Franklin County Food Process Center. Folks do not have to have experience to can food at the Cannery. Agriculture teachers from the Franklin County School System help every step of the way in the process. Earlier in the year, the Cannery received $100,000 in funds for renovations. CTAE Director Brent Lemond completed the application for the canning grant offered and he announced the award in May. These funds will be used to cover the cost of equipment for the Cannery, including $45,900 for a retort, about $4,000 for a recording retort thermometer, about $6,000 for a seamer and $32,525 for a continuous line exhauster or steam tunnel. Board member Gary Minyard described the retort as a large scale pressure cooker that, compared to a home pressure cooker, can hold 100-120 glass jars or metal cans at one time. Lemond said that they will be able to use these funds and complete the renovations by the end of next summer. The Franklin County Food Process Center is open Mondays and Thursdays at 7:30 a.m. to 11 a.m. at 57 Hartwell Street in Lavonia. (Photos by Raese)
